- 2 large cucumbers, sliced
- 4 medium tomatoes, chopped
- 1/2 red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and prepare all the vegetables.
- In a bowl, combine the cucumbers, tomatoes, and red onion together.
- Add the chopped parsley to the mix.
- In a separate bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the vegetables and toss gently to coat.
- Serve the salad chilled.
Notes
For best flavor, use ripe tomatoes and adjust seasoning to your taste. Store leftovers in an airtight container for up to two days, but avoid mixing in dressing until serving.
