Description

Delightful gluten-free cupcakes made with apple cider and warm spices, topped with a spiced buttercream frosting.


Ingredients

  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

  • Pinch of cloves
  • 1/2 cup butter, melted (or coconut oil or dairy-free butter alternative)
  • 1/2 cup brown sugar
  • 1/3 cup applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/2 cup butter, softened
  • 12 tbsp water, milk, or more apple cider
  • 1/2 tsp cinnamon (for frosting)
  • Pinch of nutmeg (for frosting)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix the oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves together.
  3. In another bowl, combine the melted butter, brown sugar, applesauce, apple cider, vanilla, and eggs. Mix well until everything is blended.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared muffin tin, filling each liner about two-thirds full.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  7. Allow the cupcakes to cool completely before frosting.
  8. For the Spiced Buttercream Frosting, beat the softened butter until creamy, then gradually add the powdered sugar, mixing until smooth.
  9. Add the water, milk, or more apple cider, along with vanilla, cinnamon, and nutmeg. Mix until you reach your desired consistency.

Notes

For extra moisture, you can add more apple cider to the batter. Ensure cooling before frosting to prevent melting.
