Ingredients

- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup diced apples
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix cottage cheese, milk, eggs, and vanilla until well combined.
- In another bowl, combine flour, sugar, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the diced apples.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
These muffins can be prepared in advance. Store leftovers in an airtight container for up to a week or freeze for longer storage.
