Description

Soft and fluffy muffins infused with warm cinnamon and fresh apple flavors, perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix cottage cheese, milk, eggs, and vanilla until well combined.
  3. In another bowl, combine flour, sugar, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the diced apples.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

These muffins can be prepared in advance. Store leftovers in an airtight container for up to a week or freeze for longer storage.
