Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 can apple pie filling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon.
  3. In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry mixture and stir until just combined.
  5. Fill each muffin cup halfway with the batter, then add a spoonful of apple pie filling in the center, and top with more batter until almost full.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes in the pan before transferring the muffins to a wire rack to cool completely.
