How to Make Baked Oysters

Ingredients

  • 3 pounds rock salt
  • 6 tablespoons unsalted butter (at room temperature)
  • 2 cloves garlic (finely minced)
  • 1 medium lemon (zested and juiced)
  • 2 teaspoons minced parsley
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 12 to 16 unshucked oysters (left in the fridge until you’re ready to use them)
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Preheat the oven to 375 degrees Fahrenheit. Pour the rock salt on a large baking pan evenly and set aside for later.
  2. In a medium bowl, whip the butter until light and fluffy. Add the garlic, 1 teaspoon of lemon zest, 2 teaspoons of lemon juice, parsley, salt, and pepper. Whip again until well combined and set aside.
  3. Remove the oysters from the fridge and scrub them clean. To protect your hands while shucking, roll a kitchen towel and place it around the thumb of your non-dominant hand.
  4. Hold the oyster upside down between the folds of the towel. Carefully insert the tip of an oyster knife at an angle into the hinge (the pointed end of the oyster) until you hear a light crack, and some liquid leaks from the edges.
  5. Work the knife under the shell to sever the muscle that attaches the shell until the top is loosening completely. Remove the top shell and cut the muscle connecting to the bottom side. Flip the oyster over in the shell to ensure it is loose.
  6. Pour out a little of the liquid from the oyster, leaving about ½ – 1 teaspoon in the shell.
  7. Place the oyster on the salt in the baking pan. Repeat the shucking process for the remaining oysters.
  8. Once all the oysters are prepared, add dollops of the butter mixture on top of each oyster and sprinkle each with Parmesan cheese.
  9. Bake for 12-15 minutes or until lightly browned and cooked through.
  10. Serve with lemon wedges and freshly chopped parsley for garnish if desired.

How to Serve Baked Oysters

Baked oysters are best served hot right out of the oven. Place them on a serving platter over the remaining rock salt to keep them stable and prevent tipping. Garnish with lemon wedges and chopped parsley for extra flavor and color. These oysters make a fantastic appetizer or can even be the star of your main dish accompanied by a fresh salad or bread.

How to Store Baked Oysters

If you have any leftovers, store them in an airtight container in the refrigerator. They are best consumed within 1-2 days. However, it’s important to note that oysters are best enjoyed fresh, and reheating may change the texture and flavor.

Tips to Make Baked Oysters

  • Make sure to clean the oysters thoroughly before shucking them.
  • Be careful when using the oyster knife, as they can be very sharp.
  • You can adjust the butter mixture ingredients to suit your taste. For a spicier kick, consider adding some red pepper flakes.
  • Try not to overcook the oysters as they can become tough.

Variation

You can customize the topping for baked oysters by adding different ingredients. For example, try adding crispy bacon bits, different types of cheese, or even a touch of hot sauce for a spicy twist.
