- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 1 lb lean ground beef
- 4 cloves garlic, minced
- 1–2 tbsp chili powder (adjust for spice level)
- 1 tbsp ground cumin
- 1 tbsp brown sugar
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp tomato paste
- 1¾ cups low sodium beef broth (or one 14.5 oz can)
- 1 28 oz can fire-roasted crushed or diced tomatoes
- 1 15 oz can red kidney beans, rinsed and drained
- 1 15 oz can pinto or black beans, rinsed and drained
- Optional toppings: Shredded cheddar cheese, sour cream, avocado slices, chopped red or green onions, fresh cilantro, tortilla chips or cornbread.
Instructions
- Heat olive oil in a large pot over medium-high heat. Add the chopped onion and cook for about 2 minutes until it becomes softened and fragrant.
- Add the ground beef to the pot, breaking it up as it cooks. Cook until browned, which should take about 5 minutes. Drain any excess grease, then stir in the minced garlic and allow it to cook for 30 seconds until aromatic.
- Sprinkle in the chili powder, cumin, brown sugar, oregano, salt, and black pepper. Add the tomato paste into the mix and stir well, ensuring everything is evenly coated with the spices.
- Pour in the beef broth and take the opportunity to scrape up any browned bits from the bottom of the pot, as this will add great flavor to your chili.
- Stir in the fire-roasted tomatoes along with the kidney beans and pinto or black beans. Mix everything together, allowing the flavors to meld.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 90 minutes to 120 minutes while stirring occasionally. Cover the pot for the first part to enhance the flavors, then uncover during the last 30 minutes to help thicken the chili.
- Once ready, serve hot with optional toppings like shredded cheddar cheese, sour cream, avocado, chopped green onions, or cilantro.
Notes
