Southern Peach Cobbler

Description

A classic Southern dessert featuring sweet peaches and a buttery biscuit topping, perfect for any occasion.


Ingredients

  • 2 bags Frozen peaches (20 ounces each)
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract
  • 1/2 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 1/2 stick Unsalted butter (room temperature)
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice
  • 2 cups All-purpose flour
  • 1/2 cup Granulated sugar (for topping)
  • 1/2 cup Brown sugar (for topping)
  • 2 teaspoons Baking powder
  • 1 tablespoon Cinnamon (reserving 1/2 for garnishment)
  • 1 stick Unsalted butter (cold)
  • 1/4 cup Boiling hot water
  • 1/2 teaspoon Salt
  • 3 tablespoons Granulated sugar (for dusting top)

Instructions

  1. Preheat your oven to 375°F. Spray a 9×13 baking dish with non-stick spray.
  2. In the baking dish, mix the frozen peaches, white and brown sugars, vanilla and almond extracts, cinnamon, nutmeg, corn starch, cream of tartar, butter, water, and lemon juice together until well combined.
  3. Cover the dish with foil and bake for 20 minutes.
  4. While the peaches are baking, combine the flour, both sugars, baking powder, salt, and 1/2 tablespoon of cinnamon in a bowl.
  5. Work the cold stick of butter into the flour mixture until it looks like coarse meal.
  6. Add the hot water and stir until just combined. The mixture should have a drop biscuit-like texture.
  7. After 20 minutes, take the peaches out of the oven and spoon the cobbler dough evenly over the top. Each dollop should be about the size of a golf ball.
  8. Sprinkle the rest of the sugar and cinnamon mixture on top of the dough.
  9. Put the dish back in the oven without cover and bake for another 30-45 minutes until the crust turns golden brown. Check after 30 minutes and take it out once it’s perfectly golden and delicious.

Notes

Serve warm with vanilla ice cream or whipped cream. Adjust sugar levels to taste, and feel free to use different fruits for variation.
