- 2 cups cooked shredded chicken
- 1 cup carrots, julienned
- 1 cup baby spinach or bok choy
- 2 tbsp soy sauce
- 1 tbsp lime juice
- Salt & pepper, to taste
- Fresh cilantro and sliced jalapeños for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
- Stir in the red pepper flakes and sriracha, allowing the spices to mingle for an additional minute.
- Pour in the chicken broth, stirring to combine. Bring to a gentle simmer.
- Incorporate the shredded chicken, julienned carrots, and soy sauce into the broth. Add noodles if desired, cooking until tender (5-7 minutes).
- Stir in spinach or bok choy and lime juice before removing from heat. Serve hot, garnished with cilantro and jalapeños if using.
Notes
Use fresh ingredients for best flavor. Cook noodles separately if not serving immediately.
