- 2 pre-made pie crusts
- 4 cups fresh blackberries
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tbsp butter
- Milk or beaten egg, for brushing pastry
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out one pie crust into a 9-inch pie dish.
- In a bowl, toss the blackberries with sugar, cornstarch, and lemon juice until well mixed.
- Pour the blackberry mixture into the pie crust and dot the top with pieces of butter.
- Cut the remaining pie crust into strips and arrange them on top to create a lattice pattern.
- Brush the lattice crust with a little milk or beaten egg for a golden finish.
- Bake in the preheated oven for 45-50 minutes until the crust is golden and the filling is bubbly.
Notes
Serve warm, with ice cream or whipped cream. Store leftovers in an airtight container at room temperature for 2 days, or refrigerate for a week. Freeze wrapped well for longer storage.
