Description

A delicious and healthy treat that combines the sweetness of blueberries with moist zucchini, perfect for breakfast, snacks, or dessert.


Ingredients

  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1½ cups all-purpose flour
  • 1½ cups shredded zucchini
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the vegetable oil, brown sugar, granulated sugar, beaten eggs, and vanilla extract until smooth.
  3. Add the ground cinnamon, baking soda, baking powder, and salt to the mixture and stir to combine.
  4. Gently stir in the all-purpose flour until just blended.
  5. Fold in the shredded zucchini and then carefully fold in the blueberries.
  6. Pour the batter into the prepared loaf pan and bake for 50–60 minutes, checking for doneness with a toothpick.
  7. Allow the loaf to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, consider adding chopped nuts or a sprinkle of lemon zest. You can also use frozen zucchini but ensure it is thawed and drained.
