A delightful dessert combining the sweetness of ripe peaches with rich brown sugar, perfect for gatherings or a sweet treat any day.

- 15 ounces yellow cake mix
- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or peach juice
- 1 lb peeled and chopped peaches
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
- 1 cup packed brown sugar
- 1 tsp vanilla extract
- 2 1/2 cups confectioner’s sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, blend together the cake mix, eggs, vegetable oil, and peach nectar until well combined.
- Gently fold in the chopped peaches.
- Pour the batter into a lightly sprayed 9×12 inch baking pan and smooth the top.
- Bake in the oven for about 28 minutes or until a toothpick comes out clean.
- While the cake is baking, prepare the frosting by combining the unsalted butter, heavy cream, and brown sugar in a saucepan. Bring to a boil while stirring constantly.
- Once boiling, remove from heat and stir in the vanilla extract and confectioner’s sugar. Whisk until well blended.
- After the cake is done baking, pour the frosting over the warm cake. Let it cool and harden before cutting into pieces.
Notes
Serve warm or at room temperature with vanilla ice cream or whipped cream. Garnish with additional peach slices or a sprinkle of cinnamon.
