- 1 box chocolate cake mix
- 2 cups shredded zucchini (about 2 medium)
- 3 eggs
- 1/2 cup melted butter (cooled)
- 1/4 cup milk or water
- 1–2 cups chocolate chips
Instructions
- Preheat the oven to 350°F and grease two loaf pans with cooking spray.
- In a large bowl, combine the eggs, milk, melted butter, and dry cake mix; mix well until smooth.
- Fold in the shredded zucchini until fully combined.
- Gently mix in the chocolate chips, saving some for the topping.
- Pour the batter evenly into the prepared pans and sprinkle remaining chocolate chips on top.
- Bake for 40-50 minutes or until a toothpick inserted comes out clean.
- Let the bread cool in the pans for at least 10 minutes before transferring to a wire rack to cool completely.
Notes
Squeeze out excess moisture from the shredded zucchini before adding to the batter for best results.
