A moist and flavorful bread combining chocolate cake mix and fresh zucchini, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 box chocolate cake mix
  • 2 cups shredded zucchini (about 2 medium)
  • 3 eggs
  • 1/2 cup melted butter (cooled)
  • 1/4 cup milk or water
  • 12 cups chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease two loaf pans with cooking spray.
  2. In a large bowl, combine the eggs, milk, melted butter, and dry cake mix; mix well until smooth.
  3. Fold in the shredded zucchini until fully combined.
  4. Gently mix in the chocolate chips, saving some for the topping.
  5. Pour the batter evenly into the prepared pans and sprinkle remaining chocolate chips on top.
  6. Bake for 40-50 minutes or until a toothpick inserted comes out clean.
  7. Let the bread cool in the pans for at least 10 minutes before transferring to a wire rack to cool completely.

Notes

Squeeze out excess moisture from the shredded zucchini before adding to the batter for best results.
