Description

A fresh and colorful dish that brings together the flavors of Italy, perfect for warm days and gatherings.


Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls
  • 1/4 cup fresh basil, chopped
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar

Instructions

  1. Cook the rotini pasta according to the package instructions. Be sure to drain the pasta and let it cool.
  2. In a large bowl, combine the cooled pasta, halved cherry tomatoes, mozzarella balls, and chopped basil.
  3. Drizzle the olive oil and balsamic vinegar over the mixture.
  4. Toss everything gently to combine. Serve the salad chilled.

Notes

Caprese Pasta Salad is best served cold. Garnish with extra basil if desired. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
