- 500 g chicken breast (trimmed and sliced into 1.5 cm pieces)
- 1 large head cauliflower (cut into medium florets, about 1 kg)
- 1 tbsp butter (heaping)
- 1 tbsp brown rice flour (or preferred flour/starch)
- 200 ml heavy cream
- 50–100 ml water (to loosen the sauce if needed)
- 100 g Gouda cheese (grated)
- 30 g Parmesan cheese (finely grated)
- 1 pinch nutmeg (freshly grated)
- 1 small clove garlic (minced, optional)
- Salt and black pepper (to taste)
- 1–2 tbsp neutral oil (for searing)
- Extra grated cheese (for topping)
- Parsley (chopped, optional)
Instructions
- Preheat the oven to 200°C (about 400°F).
- Sear the sliced chicken breast in a large skillet with neutral oil over medium-high heat, seasoning with salt and black pepper.
- Cook the cauliflower florets in the same skillet for about 5-7 minutes until softened.
- Add butter to the skillet, melting it before stirring in the brown rice flour.
- Whisk in the heavy cream and water until smooth, adding nutmeg and cheeses, stirring until melted.
- Combine the seared chicken with the cauliflower and sauce, ensuring everything is coated.
- Transfer the mixture to a baking dish, top with extra grated cheese, and bake for 20-25 minutes until golden and bubbly.
Notes
To make prep easier, chop ingredients the night before and store separately in the fridge. This dish can be easily frozen for longer storage.
