  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese (or a mix of your favorite cheeses)
  • 1/2 cup sour cream (optional, for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes, halving or quartering them for even cooking.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
  4. Mix the ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
  5. In a large bowl, toss the halved potatoes with olive oil and half of the ranch mixture.
  6. Line a large baking sheet with parchment paper and arrange the potatoes in a single layer.
  7. Scatter the sliced smoked sausage over the potatoes.
  8. Roast in the oven for 35 to 40 minutes, stirring halfway through.
  9. Remove from the oven and sprinkle with shredded cheddar; return to the oven for an additional 5 minutes until cheese is melted.
  10. Garnish with fresh parsley and serve with sour cream if desired.
