Description

Deliciously chewy and gooey cookies featuring the unique addition of sourdough discard for added flavor and depth.


Ingredients

  • 113 grams (8 tablespoons) unsalted butter
  • 160 grams brown sugar
  • 140 grams granulated sugar
  • 1 large egg
  • 80 grams sourdough discard (room temperature)
  • 3/4 tablespoon pure vanilla extract
  • 235 grams all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon fine salt
  • 170 grams (6 ounces) chopped dark or semisweet chocolate
  • Flaky salt (optional)

Instructions

  1. Brown the Butter: Melt the unsalted butter in a saucepan over medium heat, stirring frequently until it becomes a rich golden color and has a nutty aroma (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Mix Sugars: In a large bowl, combine brown sugar and granulated sugar. Pour in the slightly cooled brown butter and mix until well blended.
  3. Add Egg and Sourdough: Mix in the large egg and sourdough discard until fully combined.
  4. Incorporate Vanilla: Add the pure vanilla extract and mix until the batter is smooth.
  5. Combine Dry Ingredients: In another bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients and mix gently.
  6. Fold in Chocolate: Carefully fold in the chopped chocolate until evenly distributed.
  7. Chill the Dough: Cover the mixing bowl with plastic wrap and chill in the fridge for at least 30 minutes.
  8. Bake: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and scoop the cookie dough onto the prepared sheet, spacing them apart. Sprinkle with flaky salt if desired.
  9. Cook: Bake in the preheated oven for 10-12 minutes until edges are lightly browned and the center appears slightly underbaked.
  10. Cool and Enjoy: Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Dough can be made ahead and stored in the refrigerator for up to 3 days, or frozen for up to 3 months. To enjoy, simply bake from frozen, adding a minute or two to the baking time.
