- 1 teaspoon ground cinnamon

- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups grated zucchini (about 1 medium zucchini)
- ¾ cup semi-sweet chocolate chips
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat the oven to 175°C (350°F). Grease a 9×5-inch baking pan or line it with parchment paper.
- Grate the zucchini and gently squeeze it to remove excess moisture.
- In a medium bowl, mix the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- In a large bowl, combine the wet ingredients: oil, granulated sugar, brown sugar, eggs, and vanilla extract. Beat until smooth and creamy.
- Add the grated zucchini to the wet mixture and stir until combined.
- Gently mix the dry and wet ingredients together until just combined.
- Fold in the chocolate chips and nuts, if using.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cover with foil if the top browns too fast.
- Let the bread cool in the pan for 10-15 minutes before removing it to cool completely on a wire rack.
Notes
For best flavor, let the bread sit for a day before slicing. Store in an airtight container for up to 3 days, or refrigerate for a week.
