Description

Ingredients

  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup vegetable oil (or melted coconut oil)
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • ¾ cup semi-sweet chocolate chips
  • Optional: ½ cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 175°C (350°F). Grease a 9×5-inch baking pan or line it with parchment paper.
  2. Grate the zucchini and gently squeeze it to remove excess moisture.
  3. In a medium bowl, mix the dry ingredients: flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  4. In a large bowl, combine the wet ingredients: oil, granulated sugar, brown sugar, eggs, and vanilla extract. Beat until smooth and creamy.
  5. Add the grated zucchini to the wet mixture and stir until combined.
  6. Gently mix the dry and wet ingredients together until just combined.
  7. Fold in the chocolate chips and nuts, if using.
  8. Pour the batter into the prepared baking pan and spread it evenly.
  9. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cover with foil if the top browns too fast.
  10. Let the bread cool in the pan for 10-15 minutes before removing it to cool completely on a wire rack.

Notes

For best flavor, let the bread sit for a day before slicing. Store in an airtight container for up to 3 days, or refrigerate for a week.
