Ingredients

  • 4 chicken thighs, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup red onion, diced
  • 1/2 lime, juiced
  • 1/2 cup chipotle sauce

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper, then add to the skillet.
  3. Cook for about 6 to 7 minutes on each side until fully cooked.
  4. Prepare the avocado salsa by mixing diced avocado, tomatoes, cilantro, red onion, and lime juice in a bowl.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing.
  6. Assemble the bowls with cilantro lime rice on the bottom, followed by sliced chicken, avocado salsa, and a drizzle of chipotle sauce.
  7. Serve immediately and enjoy!

Notes

Cilantro lime rice can be homemade or store-bought. Chipotle sauce adds smoke and heat; adjust quantity for preferred spice level.
