- 4 chicken thighs, boneless and skinless
- 1 tablespoon olive oil

- 1 teaspoon black pepper
- 1 avocado, diced
- 1 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup red onion, diced
- 1/2 lime, juiced
- 1/2 cup chipotle sauce
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season chicken thighs with salt and pepper, then add to the skillet.
- Cook for about 6 to 7 minutes on each side until fully cooked.
- Prepare the avocado salsa by mixing diced avocado, tomatoes, cilantro, red onion, and lime juice in a bowl.
- Once the chicken is cooked, let it rest for a few minutes before slicing.
- Assemble the bowls with cilantro lime rice on the bottom, followed by sliced chicken, avocado salsa, and a drizzle of chipotle sauce.
