Ingredients

  • 1 pre-made pie crust
  • 1 can (15 oz) pumpkin puree
  • 3/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 2 eggs
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie crust into a 9-inch pie dish.
  3. In a large bowl, whisk together the pumpkin puree, brown sugar, cinnamon, ginger, and nutmeg until combined.
  4. Beat in the eggs one at a time, then stir in the heavy cream until smooth.
  5. Pour the filling into the pie crust.
  6. Bake for 45-50 minutes until the center is set.
  7. Cool completely before serving, ideally with a dollop of whipped cream on top.

Notes

For a smoother filling, blend the pumpkin mixture in a blender. Store covered in the refrigerator for up to 4 days.
