Ingredients

  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/23/4 teaspoon salt
  • 1/21 teaspoon ground white pepper
  • 14.5 ounce can chicken broth
  • 15 ounce can mixed vegetables
  • 2 cups half and half

Instructions

  1. In a large saucepan, melt the butter over medium heat.
  2. Stir in the flour, garlic powder, onion powder, white pepper, and salt. Let the mixture simmer for 1 minute while stirring.
  3. Whisk in the chicken broth and the drained mixed vegetables.
  4. Bring this mixture to a simmer and cook for 5 minutes.
  5. Using a potato masher, emulsion blender, or standard blender, mash the vegetables into the soup until you reach your desired consistency.
  6. Whisk in the half and half and let it simmer for an additional 5 minutes.
  7. Serve your soup warm.

Notes

Adjust seasoning to taste. For a creamier soup, use heavy cream instead of half and half. Reserve some mixed vegetables for a chunkier texture.
