Ingredients

- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2–3/4 teaspoon salt
- 1/2–1 teaspoon ground white pepper
- 14.5 ounce can chicken broth
- 15 ounce can mixed vegetables
- 2 cups half and half
Instructions
- In a large saucepan, melt the butter over medium heat.
- Stir in the flour, garlic powder, onion powder, white pepper, and salt. Let the mixture simmer for 1 minute while stirring.
- Whisk in the chicken broth and the drained mixed vegetables.
- Bring this mixture to a simmer and cook for 5 minutes.
- Using a potato masher, emulsion blender, or standard blender, mash the vegetables into the soup until you reach your desired consistency.
- Whisk in the half and half and let it simmer for an additional 5 minutes.
- Serve your soup warm.
Notes
Adjust seasoning to taste. For a creamier soup, use heavy cream instead of half and half. Reserve some mixed vegetables for a chunkier texture.
