- 4 slices thick cut bacon, diced
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 4 boneless skinless chicken breasts, pounded to 1/4 inch thickness
- Salt and freshly ground pepper, to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked or sweet paprika
- 4 ounces cream cheese, softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dried dill weed
- 1/2 teaspoon dried chives
- 4 ounces shredded cheddar cheese, white or yellow
- Chopped fresh parsley, for garnish
- Sliced green scallions, for garnish
Instructions
- Preheat the oven to 400°F. Lightly grease a 9×13 baking dish with cooking spray and set aside.
- In a large skillet, set over medium-high heat, add the diced bacon; cook until crispy. Remove the bacon and set aside, keeping the bacon fat in the skillet.
- Return the skillet to heat, add vegetable oil to the reserved bacon fat, and pound chicken breasts. Season with salt, pepper, garlic powder, and paprika.
- Add the chicken breasts to the hot oil and cook for 2 to 3 minutes until golden brown. Flip the chicken, add butter, and cook for another 2 minutes until browned. Remove and place in the prepared baking dish.
- Mix cream cheese, garlic powder, onion powder, dill weed, and chives in a small bowl. Adjust seasoning as needed.
- Top each chicken breast with 2 tablespoons of the cream cheese mixture. Add half of the diced bacon followed by a sprinkle of shredded cheese.
- Bake uncovered for 15 minutes until chicken is cooked through and cheese is melted and lightly browned. Remove from the oven.
- Garnish with remaining bacon, fresh parsley, and scallions. Serve hot.
Notes
You can use a variety of cheeses or add your favorite herbs for an extra kick.
