- 1 can (15 oz) butter beans, drained
- 1 cup heavy cream
- 1/2 cup grated veggie-friendly Parmesan
- 1 tsp smoked paprika
Instructions
- Cook the fettuccine according to the package instructions until al dente.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until soft.
- Add the drained butter beans to the skillet, followed by the heavy cream, grated Parmesan, and smoked paprika.
- Stir the mixture and allow it to simmer until it thickens to your liking.
- Toss the cooked fettuccine in the creamy sauce until well coated.
Notes
