- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons butter
- Fresh chives or green onions for garnish
- 4 bread bowls
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until fragrant and translucent.
- Add the diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Blend the soup to your desired creaminess with a potato masher or immersion blender.
- Stir in the heavy cream, and season with salt and pepper. Heat through.
- Hollow out the bread bowls carefully. Ladle the hot soup into the bread bowls and garnish with fresh chives or green onions.
- Serve immediately and enjoy.
Notes
For advanced prep, peel and dice potatoes and chop onions the day before. Store in the refrigerator. The soup can be made a day ahead and reheated before serving.
