Description

A warming and comforting creamy potato soup served in a freshly baked bread bowl, perfect for chilly evenings and family gatherings.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh chives or green onions for garnish
  • 4 bread bowls

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sauté until fragrant and translucent.
  2. Add the diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Blend the soup to your desired creaminess with a potato masher or immersion blender.
  4. Stir in the heavy cream, and season with salt and pepper. Heat through.
  5. Hollow out the bread bowls carefully. Ladle the hot soup into the bread bowls and garnish with fresh chives or green onions.
  6. Serve immediately and enjoy.

Notes

For advanced prep, peel and dice potatoes and chop onions the day before. Store in the refrigerator. The soup can be made a day ahead and reheated before serving.
