- 1 cup roasted peanuts
- 1 cup granulated sugar
- 1/4 cup light corn syrup
- 6 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Pinch of salt
- Flaky sea salt (optional, for topping)
- Melted chocolate (optional, for drizzling)
Instructions
- Line a baking sheet with parchment paper. Place the crackers and peanuts into a large mixing bowl.
- In a heavy-bottom saucepan over medium heat, combine sugar, corn syrup, and butter. Stir constantly as it melts and comes to a gentle boil. Cook for 7–9 minutes until it turns golden amber.
- Remove from heat and stir in vanilla, baking soda, and a pinch of salt. The mixture will foam up.
- Pour the hot caramel over the crackers and peanuts, gently folding until everything is coated.
- Transfer the mixture to the prepared sheet and spread into an even layer about 1/2-inch thick. Lightly press with a spatula.
- Let cool at room temperature for 15–20 minutes until firm. Slice into squares or bars.
Notes
For storage, keep in an airtight container at room temperature for up to 4 days. For longer storage, wrap bars in parchment and freeze for up to 2 months.
