- 4 boneless, skinless chicken breasts, diced
- 1 lb smoked sausage, sliced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup long-grain rice
- 1 onion, diced
- 1 bell pepper, diced
- 1 tbsp Cajun seasoning
Instructions
- Sauté the chicken and sausage in a little oil in a pan until sealed.
- In the crockpot, combine the chicken, sausage, diced tomatoes, chicken broth, rice, onion, and Cajun seasoning.
- Cook on low for 3-4 hours until the rice is cooked and the chicken is tender.
- Add the bell pepper for the final 30 minutes of cooking.
Notes
For extra flavor, add some chopped garlic when sautéing the chicken and sausage. Adjust cooking time if using brown rice.
