Description

A slow-simmered comfort dish featuring tender potatoes, savory beef, and gooey cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef, lean or regular
  • 4 to 5 medium russet or Yukon gold potatoes, thinly sliced, about 1/8 inch thick
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese, sharp or mild, divided
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley or chopped chives, for garnish

Instructions

  1. Cook ground beef and chopped onion in a skillet over medium heat until browned, about 5 to 7 minutes. Drain excess fat.
  2. Wash and thinly slice the potatoes evenly, about 1/8 inch thick.
  3. In the crockpot, layer half the potatoes, followed by half the beef and onion mixture, and a portion of cheese.
  4. Repeat layers with remaining ingredients, finishing with a tidy layer of potato and cheese.
  5. In a bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth.
  6. Pour creamy mixture over the layered ingredients in the crockpot.
  7. Cover and cook on low for 6 to 8 hours, or until potatoes are tender.
  8. 15 minutes before serving, sprinkle remaining cheddar cheese on top and cover to melt.
  9. Garnish with fresh parsley or chives before serving.

Notes

You can prep ingredients the night before for an effortless dinner. For a lighter version, consider using ground turkey and low-fat cheese.
