Ingredients

- ¾ cup Greek yogurt (or plain full-fat yogurt)
- 1 ½ tablespoons extra virgin olive oil
- 1 ½ tablespoons lemon juice
- ¼ teaspoon grated garlic
- 1 ½ lbs cucumbers, sliced
- ½ red onion, finely sliced
- ¼ cup fresh dill, chopped
- Salt and black pepper to taste
Instructions
- In a small bowl, mix together the Greek yogurt, olive oil, lemon juice, grated garlic, salt, and black pepper until smooth.
- Slice the cucumbers and red onion finely.
- In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.
- Drizzle the yogurt dressing over the vegetables and toss until everything is well coated.
- Serve immediately or refrigerate until ready to enjoy.
Notes
Use fresh, crunchy cucumbers for best texture. Adjust garlic to your taste; add red pepper flakes for spice. Store in an airtight container for up to 2-3 days.
