A refreshing and vibrant salad combining cucumbers, tomatoes, red onion, and everything bagel seasoning, perfect for warm days and gatherings.


Ingredients

  • 2 cups fresh cucumbers (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped)
  • 2 tbsp everything bagel seasoning
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Rinse cucumbers, tomatoes, and parsley under cold water and pat dry.
  2. Slice cucumbers into half-moons and halve the cherry tomatoes.
  3. Optionally, sauté red onion in olive oil until softened.
  4. In a large bowl, mix cucumbers, tomatoes, red onion (if using), parsley, and everything bagel seasoning; toss gently.
  5. Whisk olive oil and balsamic vinegar in a small bowl; pour over salad and toss to coat.
  6. Serve immediately or chill briefly before serving.
