Ingredients

- 2 cups fresh cucumbers (sliced)
- 1 cup cherry tomatoes (halved)
- 1/2 cup red onion (thinly sliced)
- 1/4 cup fresh parsley (chopped)
- 2 tbsp everything bagel seasoning
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
Instructions
- Rinse cucumbers, tomatoes, and parsley under cold water and pat dry.
- Slice cucumbers into half-moons and halve the cherry tomatoes.
- Optionally, sauté red onion in olive oil until softened.
- In a large bowl, mix cucumbers, tomatoes, red onion (if using), parsley, and everything bagel seasoning; toss gently.
- Whisk olive oil and balsamic vinegar in a small bowl; pour over salad and toss to coat.
- Serve immediately or chill briefly before serving.
Notes
Use fresh herbs for better flavor. Consider adding red pepper flakes for spice or feta cheese for creaminess.
