Description

A fresh and vibrant salad combining the cool crunch of cucumber with the sweet juiciness of strawberries, perfect for summer days.


Ingredients

  • 1 cucumber
  • 2 cups strawberries
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh mint

Instructions

  1. Wash cucumber under cold water and slice it into thin rounds.
  2. Place cucumber slices in a large mixing bowl.
  3. Rinse and hull the strawberries, then slice them and add to the cucumber.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, and honey until well combined.
  5. Season the dressing with salt and pepper, and whisk again.
  6. Pour the dressing over the cucumber and strawberries; toss gently.
  7. Wash and chiffonade the mint leaves and add to the salad, tossing once more.
  8. Adjust seasoning as needed, and let sit for 5-10 minutes to meld flavors.
  9. Serve immediately or refrigerate, enjoying within a few hours for best texture.
