Ingredients

- 1 English cucumber, sliced and quartered
- 2 cups grape tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 2 Tbsp chopped parsley
- 1/4 cup olive oil
- 3 Tbsp red wine vinegar
- 1 Tbsp sugar
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Wash and chop the cucumber, tomatoes, onion, and parsley.
- In a small bowl, whisk together the olive oil, vinegar, sugar, dried basil, salt, and pepper.
- In a large bowl, add the chopped vegetables, drizzle with the dressing, and toss to combine.
- Cover the bowl and chill in the refrigerator for 1–2 hours. Toss again before serving.
