Description

A refreshing and light salad perfect for hot summer days, featuring fresh cucumbers, tomatoes, red onion, and a flavorful dressing.


Ingredients

  • 1 English cucumber, sliced and quartered
  • 2 cups grape tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 2 Tbsp chopped parsley
  • 1/4 cup olive oil
  • 3 Tbsp red wine vinegar
  • 1 Tbsp sugar
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Wash and chop the cucumber, tomatoes, onion, and parsley.
  2. In a small bowl, whisk together the olive oil, vinegar, sugar, dried basil, salt, and pepper.
  3. In a large bowl, add the chopped vegetables, drizzle with the dressing, and toss to combine.
  4. Cover the bowl and chill in the refrigerator for 1–2 hours. Toss again before serving.
