- 1 large egg
- 1/2 cup whole milk
- Vegetable oil (for frying)
Instructions
- Prepare the peaches by washing, peeling, and dicing them into bite-sized chunks.
- In a mixing bowl, combine flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat the egg and mix in the milk. Pour this mixture into the dry ingredients and stir until just combined; keep the batter lumpy.
- Gently fold in the peach pieces.
- Heat about two inches of vegetable oil in a deep skillet over medium-high heat until shimmering.
- Drop spoonfuls of batter into the hot oil and fry until golden brown (about 3-4 minutes per side). Drain on paper towels and sprinkle with cinnamon sugar while warm.
