- 4 pieces Boneless skinless chicken breasts (Pounded to 1/2 inch thickness)
- 1 tablespoon Olive oil
- ½ teaspoon Garlic powder
- 1 teaspoon Dried Italian seasoning

- 2 tablespoons Butter
- 1 piece Shallot (Minced)
- 1 cup Chicken broth
- ½ cup Heavy cream
- ½ cup Grated parmesan cheese
- 1 package Boursin cheese
- to taste Fresh parsley (Chopped)
- to taste Fresh thyme (Chopped)
Instructions
- Pat the chicken dry and season both sides with garlic powder, Italian seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat, then add the chicken and sear for 3-4 minutes per side until golden.
- Transfer chicken to a plate and tent with foil.
- Reduce heat to medium, add butter, and cook shallot until softened.
- Pour in chicken broth to deglaze the pan, scraping the fond.
- Add heavy cream, bringing it to a gentle simmer.
- Stir in grated Parmesan and Boursin until melted into a smooth sauce.
- Return chicken to the skillet, spoon sauce over, and simmer for an additional 2-3 minutes.
- Finish with fresh herbs, taste for seasoning, and serve with extra sauce.
Notes
Use high-quality Boursin and freshly grated Parmesan for best results. Can prepare chicken a day in advance.
