- 1.5 lbs boneless skinless chicken thighs
- 3 tbsp fresh lime juice (about 2 limes)
- 2 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
- 8–12 corn tortillas (small size)
- ½ cup white onion (finely chopped)
- ½ cup fresh cilantro (chopped)
- Lime wedges for serving
- Cotija cheese
- Avocado slices
- Salsa verde
- Pickled red onions
Instructions
- Marinate the Chicken: In a bowl, mix lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Add the chicken thighs and coat them well. Cover and let it marinate for at least 30 minutes or up to 2 hours in the fridge.
- Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes on each side or until the chicken is fully cooked and has a nice char. When done, let it rest for a few minutes.
- Rest and Slice: After resting, slice the chicken into thin strips to be used in the tacos.
- Warm the Tortillas: In a skillet, warm the corn tortillas for about 30 seconds on each side until they are soft and pliable.
- Assemble the Tacos: Place some sliced chicken on each tortilla. Top with chopped onions, cilantro, avocado slices, and cotija cheese. Feel free to add salsa verde and pickled red onions for extra flavor.
Notes
For added flavor, use different spices and warm tortillas over a flame for a smoky taste. Mix and match toppings based on preferences.
