A comforting and nutritious chicken zucchini bake that’s perfect for busy weeknights or lazy Sundays, packed with flavors and wholesome ingredients.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, diced
  • 1 medium onion, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika (plus extra for garnish)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1/4 cup fresh cilantro or parsley, chopped
  • 2 cups cooked rice (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a large mixing bowl, combine the chicken, zucchini, and onions.
  3. Drizzle olive oil over the mixture and add garlic, smoked paprika, cumin, oregano, salt, and pepper. Toss until well coated.
  4. Transfer the mixture into the prepared baking dish in a single layer.
  5. Bake for 25-30 minutes until chicken is cooked through and zucchini is tender.
  6. Sprinkle with fresh herbs and smoked paprika before serving.
  7. Serve over cooked rice.

Notes

You can chop the vegetables and chicken a day ahead of time, and store them in the fridge until ready to bake. This dish also freezes well for up to 3 months.
