- 2 cups beef broth

- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and garlic; sauté until softened, about 3 to 4 minutes.
- Add ground beef and cook until browned, breaking it into pieces, about 6 to 8 minutes.
- Stir in rice, beef broth, and Italian seasoning, scraping the skillet for flavors.
- Bring to a boil, then reduce heat and simmer for 15 to 20 minutes until rice is cooked.
- Mix in the mixed vegetables, cooking for an additional 3 to 5 minutes.
- Season with salt and pepper to taste and serve hot.
Notes
Swap ground beef for ground turkey or ground chicken for a leaner option. Use gluten-free beef broth if needed.
