  • 1 cup rice
  • 2 cups beef broth
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic; sauté until softened, about 3 to 4 minutes.
  3. Add ground beef and cook until browned, breaking it into pieces, about 6 to 8 minutes.
  4. Stir in rice, beef broth, and Italian seasoning, scraping the skillet for flavors.
  5. Bring to a boil, then reduce heat and simmer for 15 to 20 minutes until rice is cooked.
  6. Mix in the mixed vegetables, cooking for an additional 3 to 5 minutes.
  7. Season with salt and pepper to taste and serve hot.
