- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef or sausage over medium heat until golden. Add chopped onion and minced garlic, cooking until softened, about 5 minutes.
- Stir in crushed tomatoes, broth, and broken lasagna noodles. Season with basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer until noodles are tender, about 15 minutes.
- Stir in ricotta cheese until heated through and creamy.
- Serve hot, topped with shredded mozzarella cheese and fresh basil.
Notes
For meal prep, chop vegetables and meat a day before. Leftovers taste even better the next day. Store in the fridge for up to 3–4 days or freeze for up to 3 months.
