Description

A comforting and hearty soup that captures the rich flavors of classic lasagna, perfect for chilly evenings and busy weeknights.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat until golden. Add chopped onion and minced garlic, cooking until softened, about 5 minutes.
  2. Stir in crushed tomatoes, broth, and broken lasagna noodles. Season with basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer until noodles are tender, about 15 minutes.
  3. Stir in ricotta cheese until heated through and creamy.
  4. Serve hot, topped with shredded mozzarella cheese and fresh basil.

Notes

For meal prep, chop vegetables and meat a day before. Leftovers taste even better the next day. Store in the fridge for up to 3–4 days or freeze for up to 3 months.
