- 8 large eggs
- 1/2 cup whole milk
- 1 cup shredded cheddar cheese (or feta)
- 2 cups chopped mixed vegetables (bell peppers, spinach, onions)
- Salt & pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until frothy.
- Add chopped vegetables and half of the cheese to the egg mixture; stir to combine.
- Pour the mixture into the prepared baking dish and sprinkle with the remaining cheese.
- Bake for 30-35 minutes or until puffed and golden brown.
- Allow cooling slightly before slicing into wedges. Serve warm or at room temperature.
