A comforting and hearty casserole featuring a savory beef filling topped with buttery mashed potatoes.


Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes, prepared from about 3 large potatoes
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese, optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  4. Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Mix to combine.
  5. Simmer for 5-7 minutes until the mixture thickens slightly.
  6. Transfer the beef mixture to a casserole dish.
  7. Top with prepared mashed potatoes, spreading evenly.
  8. Dot with butter and sprinkle cheddar cheese, if using.
  9. Bake for 20-30 minutes or until the top is golden and bubbly.
  10. Let cool for 5 minutes before serving.

Notes

Use slightly chunky mashed potatoes for more texture, or smooth mashed potatoes for a silky finish. The casserole can be prepared ahead and refrigerated before baking.
