- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, cilantro
Instructions
- In a slow cooker, combine the chicken breasts, white beans, corn, onion, garlic, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper.
- Stir to mix all the ingredients well, ensuring that the chicken is coated in the flavorful broth and spices.
- Cover and cook on low for 360-480 minutes or high for 240 minutes, until the chicken is fully cooked through and tender.
- Once ready, remove the chicken from the slow cooker and shred it into bite-sized pieces.
- Return the shredded chicken to the chili and stir well. Allow it to heat through for an additional 10-15 minutes.
- Serve hot in bowls, topping with optional garnishes like sour cream, shredded cheese, or fresh cilantro.
