- 8 Fresh Peaches, peeled, pitted, and sliced

- 6 tablespoons Unsalted Butter, chilled and cubed
- 1/4 cup Boiling Water
- 3 tablespoons White Sugar (for crust)
- 1 teaspoon Ground Cinnamon (for crust)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, mix the sliced peaches with 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch, and toss to coat.
- Pour the peach mixture into a 2-quart baking dish and bake it for 10 minutes.
- Meanwhile, in another bowl, combine the flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt.
- Cut in the chilled butter with your fingertips until the mixture looks like coarse crumbs.
- Stir in the boiling water until everything is just combined.
- Take the peaches out of the oven and drop spoonfuls of the topping dough over the hot peaches.
- In a small bowl, mix 3 tablespoons white sugar and 1 teaspoon cinnamon. Sprinkle this mixture over the entire cobbler.
- Bake in the preheated oven for about 30 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
Serve warm with vanilla ice cream or whipped cream. Use ripe peaches for best flavor and sweetness.
