How to Make Harvest Caramel Corn

Ingredients:

  • 10 cups of Popped Popcorn
  • Salt (to taste)
  • 1 cup Butter (Sweet Cream Salted)
  • 1 cup Light Brown Sugar
  • 2 teaspoons Vanilla
  • 1/2 teaspoon Baking Soda
  • Mini Rolos or Regular Rolos
  • M&M Candy (Brown, Yellow, Red, Orange, Pretzel M&M’s)

Directions:

  1. Start by preparing 10 cups of popcorn. You can pop it on the stove or use an air-popper or microwave. Just make sure to remove any un-popped kernels—nobody wants to bite down on one!
  2. Once the popcorn is popped, sprinkle it with salt to enhance that sweet and salty flavor.
  3. In a medium saucepan over medium-low heat, melt 1 cup of butter.
  4. Add in 1 cup of light brown sugar and mix well with the melted butter.
  5. Keep stirring and bring the mixture to a low boil. Let it boil for 4 minutes without stirring.
  6. After 4 minutes, add the vanilla and stir for another minute.
  7. Remove the caramel mixture from the heat and quickly stir in the baking soda. This will make the caramel bubble and change color—this is what you want!
  8. Slowly pour about a third of the caramel mixture over the salted popcorn, gently folding it in. Continue adding the caramel gradually, stirring well with each addition until the popcorn is fully coated.
  9. Now, mix in your candy! We like to add Rolo candy and Pretzel M&M’s, along with regular M&M’s.
  10. Spread the popcorn out on a cookie sheet lined with aluminum foil or a Silpat liner.
  11. Let it cool, and sprinkle with your candy mix-ins. Your Harvest Caramel Corn is now ready to serve!
