- 1 cup rolled oats
- 1 cup whole wheat flour (or gluten-free flour)
- 1/2 cup unsweetened applesauce
- 1/2 cup almond milk (or any milk of choice)
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup diced apples
- Optional: chopped nuts or raisins
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the rolled oats, flour, baking powder, baking soda, ground cinnamon, and salt. Stir to mix.
- In another bowl, whisk together the applesauce, almond milk, honey, and egg until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced apples and any optional ingredients.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
Store muffins in the refrigerator for up to five days or freeze for up to three months. Sliced bread can be added to the container for moisture retention.
