This Healthy Frittata is packed with protein, vegetables, and flavor, making it a fantastic meal for any time of the day.
Ingredients

- 4 slices bacon (or 2 tablespoons olive oil for vegetarian)
- ½ cup onion (diced)
- 1 teaspoon minced garlic
- 4 cups assorted vegetables (bell peppers, broccoli, zucchini, etc.)
- 10 eggs
- ¼ cup whole milk
- ½ teaspoon fine sea salt
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon paprika
- 1 cup shredded Cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together eggs, milk, sea salt, pepper, and paprika. Stir in shredded cheese.
- In a 10-inch cast iron skillet, cook bacon over medium heat until browned (about 5 minutes) or sauté onion and garlic in olive oil until fragrant.
- Add assorted vegetables to the skillet and cook until tender, about 5 minutes.
- Pour in the egg and cheese mixture, stir to combine, let cook on medium heat for 4-5 minutes until edges begin to set.
- Transfer skillet to preheated oven and bake for 7-10 minutes until the top is lightly browned and set.
- Cool for 10 minutes, slice, and serve warm.
Notes
Serve with a green salad or slices of avocado. It can be stored in the fridge for 3-4 days or frozen for 2-3 months.
