Instructions
- In a blender or food processor, combine cottage cheese, flour, eggs, sugar, baking powder, and salt. Blend until smooth. If you like, add vanilla extract for extra flavor.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of the batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve immediately with your favorite toppings.
Notes
Blend the batter well for a smooth texture. Don’t overcrowd the pan; cook only a few pancakes at a time. If the batter is too thick, add a little milk to reach your preferred consistency.
