- 1 pound Ground Beef
- 1 large Onion, diced
- 4 cloves Garlic, minced
- 1 (15 ounce) can Diced Tomatoes
- 1 (15 ounce) can Tomato Sauce
- 1/3 cup Tomato Paste
- 4 cups Chicken Broth
- 1 to 2 cups Water
- 1 tablespoon Italian Seasoning
- 1 teaspoon Sea Salt
- Black Pepper to taste
- 8 ounces Bowtie Pasta, uncooked
- 1/2 cup Ricotta Cheese
- 2 ounces Mozzarella Cheese, shredded
- 1/4 cup Parmesan Cheese
- 1/4 cup Fresh Parsley, chopped
Instructions
- Heat a soup pot over medium-high heat and add olive oil until shimmering.
- Add ground beef, diced onions, and minced garlic. Sauté until beef is cooked through and drain any excess fat.
- Stir in diced tomatoes, tomato sauce, tomato paste, chicken broth, Italian seasoning, sea salt, black pepper, and uncooked pasta.
- Increase heat to high and bring to a boil.
- Reduce heat to medium and simmer for 10 to 15 minutes, or until pasta is cooked. Stir frequently.
- If the soup is too thick, add water or more broth to adjust consistency.
- Add ricotta, mozzarella, and Parmesan cheese into the soup or serve on the side for garnishing.
- Garnish with fresh parsley before serving.
Notes
You can add more vegetables like spinach or mushrooms for extra nutrition, and adjust the seasonings to your taste.
