Delicious cookies that combine the bright flavors of lemon with the tart sweetness of raspberries, perfect for any occasion.


Ingredients

  • 100 g granulated sugar
  • 1 large lemon (zested)
  • 113.5 g butter (room temperature)
  • 55 g brown sugar
  • 1 large egg yolk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 175 g all-purpose flour
  • 75 g frozen raspberries (chopped small)
  • Flaked salt for sprinkling

Instructions

  1. Preheat your oven to 350°F and line 2 baking sheets with parchment paper.
  2. In a large bowl, mix the granulated sugar and lemon zest by hand.
  3. Add the room temperature butter and brown sugar to the bowl and mix on medium-high speed for 3-4 minutes until light and fluffy.
  4. Incorporate the egg yolk, vanilla extract, and lemon juice, mixing well.
  5. Gradually add the salt, baking powder, baking soda, and flour, mixing carefully.
  6. Chop the frozen raspberries into small pieces and gently fold them into the dough.
  7. Scoop out large balls of dough using a 3-tablespoon scoop, placing 5 dough balls on each lined baking sheet.
  8. Sprinkle the tops with flaked salt.
  9. Bake the cookies for 12-15 minutes until light golden brown around the edges.
  10. Let the cookies cool slightly on the pan before transferring them to a wire rack.

Notes

For an extra burst of lemon flavor, add more zest or a few drops of lemon extract. Make sure the butter is at room temperature for easy mixing.
