Description

A quick and easy dish that combines the freshness of spinach with the zesty brightness of lemon and spaghetti.


Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Juice and zest of 1 lemon
  • 4 cups fresh spinach
  • 1/4 cup grated Parmesan

Instructions

  1. Cook the spaghetti according to the package instructions. Once cooked, drain it and set it aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until it becomes fragrant.
  3. Add the fresh spinach to the skillet and cook until it wilts down.
  4. Toss the cooked spaghetti into the skillet. Add the lemon juice and zest, mixing everything thoroughly.
  5. Sprinkle the grated Parmesan on top and serve warm.

Notes

Serve with a light salad or bread. Customize with more Parmesan or fresh herbs. Store leftovers in an airtight container for up to 3 days.
