Ingredients

- 12 oz spaghetti
- 2 tbsp olive oil
- 3 garlic cloves, minced
- Juice and zest of 1 lemon
- 4 cups fresh spinach
- 1/4 cup grated Parmesan
Instructions
- Cook the spaghetti according to the package instructions. Once cooked, drain it and set it aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until it becomes fragrant.
- Add the fresh spinach to the skillet and cook until it wilts down.
- Toss the cooked spaghetti into the skillet. Add the lemon juice and zest, mixing everything thoroughly.
- Sprinkle the grated Parmesan on top and serve warm.
Notes
Serve with a light salad or bread. Customize with more Parmesan or fresh herbs. Store leftovers in an airtight container for up to 3 days.
