- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup shredded cheese, cheddar or your choice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional toppings: sour cream, green onions
Instructions
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sautéing until softened and fragrant, about 3 to 4 minutes.
- Add ground beef to the skillet and cook until browned, seasoning with salt and pepper.
- Stir in diced potatoes and bell pepper, and cook until potatoes are tender, about 15 to 20 minutes.
- Sprinkle shredded cheese over the top and cover until cheese melts, about 2 to 3 minutes.
- Serve hot with optional toppings like sour cream and green onions.
Notes
To prep in advance, you can dice potatoes and store in cold water, and chop the other vegetables ahead of time.
