  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh dill
  • Vegetable sides (asparagus or bell peppers)
  • Lemon slices or tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with a paper towel to ensure they roast beautifully.
  3. In a small bowl, mix together the olive oil, minced garlic, lemon juice, salt, and black pepper until combined.
  4. Brush the olive oil mixture generously over both sides of the salmon fillets.
  5. Place the salmon on the prepared baking sheet and top with fresh lemon slices or tomatoes.
  6. Nestle asparagus or bell pepper pieces around the fillets.
  7. Roast in the preheated oven for about 10 to 14 minutes, or until the salmon flakes easily with a fork.
  8. For extra crispiness, broil for an additional 1 to 2 minutes.
  9. Remove from the oven and let the salmon rest for 3 to 5 minutes.
  10. Sprinkle generously with fresh dill and serve warm.
