- 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
- 1 cup roasted chickpeas (optional for paleo or keto)
- 1 cup cherry tomatoes (halved)
- 1 cucumber (diced)
- ½ red onion (thinly sliced)
- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional for dairy-free)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp fresh lemon juice (for tzatziki)
- 1 garlic clove (minced, for tzatziki)
- 1 tbsp fresh dill (chopped, for tzatziki)
- Salt & pepper (to taste, for tzatziki)
- 3 tbsp olive oil (for vinaigrette)
- 2 tbsp fresh lemon juice (for vinaigrette)
- 1 tsp honey (omit for Whole30)
- 1 garlic clove (minced, for vinaigrette)
- ½ tsp dried oregano (for vinaigrette)
- Salt & pepper (to taste, for vinaigrette)
Instructions
- Marinate the Steak: In a mixing bowl, combine 3 tbsp of olive oil, 2 minced garlic cloves, 1 tbsp of lemon juice, 1 tsp of oregano, 1 tsp of thyme, ½ tsp of salt, and ¼ tsp of black pepper. Add the sirloin steak, ensuring it’s well-coated in the marinade. Let it sit for at least 30 minutes, but up to 4 hours for maximum flavor.
- Prepare the Tzatziki: In a separate bowl, mix together 1 cup of Greek yogurt, ½ grated cucumber, 1 tbsp of lemon juice, 1 minced garlic clove, and 1 tbsp of fresh dill. Season with salt and pepper to taste, and refrigerate to let the flavors meld.
- Whisk the Vinaigrette: Combine 3 tbsp of olive oil, 2 tbsp of lemon juice, 1 tsp of honey, 1 minced garlic clove, and ½ tsp of dried oregano in a small bowl. Whisk until well blended.
- Sear the Steak: Heat a skillet over medium-high heat and add a touch of olive oil. Sear the marinated steak for about 4 to 5 minutes on each side for a medium-rare finish.
- Slice the Steak: Once cooked, transfer the steak to a cutting board to rest for about 5 minutes. Slice the steak thinly against the grain.
- Warm the Grains: Gently warm your cooked grains on the stove or in the microwave.
- Assemble the Bowl: Start with a base of your choice of grains in a bowl. Add sliced steak, cherry tomatoes, diced cucumber, red onion, kalamata olives, feta cheese, and fresh herbs.
- Top it Off: Drizzle the tzatziki and the vinaigrette over the assembled bowl. Serve immediately.
Notes
For meal prep, marinate the steak a day ahead and store in the fridge. Tzatziki can be made up to 3 days in advance. Store leftovers in airtight containers for up to 3 days.
